Cooking with RJ!!!
As most of you know, I'm a bit of a Fat Kid and I love food. I'm also a bit of cook, so I thought I'd share with you some recipes for good times and giggles. Most of the recipes you'll find here are no secret, but I've somewhat made them up from tasting different dishes and trying to figure out how they did it.
Beer and Cheddar Soup
1 tbsp Butter or Margerine
1 small onion, dice it up or cut into 4, so you can remove
2-3 cloves of garlic or 1 tsp minced garlic
Shakey, Shakey, Wakey, Wakey of Worcestershire Sauce
1 bottle or can of beer
2 cups Chicken Broth or whatever 3 sachets of oxo makes, I think its just under 2 cups of liquid
3 tbsp Cornstarch or ½ cup flour depending on your choice
2 cups Half and Half
2 Cups Shreded Cheddar Cheese ( I prefer Old, better flavor)
Melt the butter on medium and add onion, Worcestershire, garlic
MOD: (if using flour…use ½ cup of butter and sprinkle in the flour during the caramelizing of the onions)
Add beer and boil for 3 minutes or so and then add chicken broth. Bring it back to a boil and lower heat and simmer for a couple minutes.
If you use corn starch instead of flour now is a good time to mix it with some water, like when you make gravy
Add the cream and cheese stirring constantly until the cheese is melted. Salt and Pepper to taste, but don’t taste too much or you’ll ruin your dinner!!!
